I just love chicken salad sandwiches. They are usually just so yummy and fast. While I was home for lunch I concocted this blend. It's not super scientific but yummy.
two pieces of seven grain bread, toasted
shredded chicken breast
1 Tbsp of mayo (more or less based on how wet or dry you like your dish)
dash garlic powder
dash old bay seasoning
dash salt
dash of pepper
pinch of Italian seasoning
green leaf lettuce
mix everything but the bread, lettuce and mustard together and spread on bread. Top with lettuce and spread mustard on other slice and enjoy.
**Note: the seasonings really bloom after sitting in the fridge for a day so be cautious not to over do it if you're not planning on eating it all in one setting.

Thanks for stopping by my blog with a comment. You have a delightful blog, I'll have to spend some time looking back through the earlier posts. I lived in Omaha, Nebraska for a while and loved the Midwest. Sure different from Texas. Your chicken salad sandwich looks just yummy.
